It can be served with a side dish of seasonal raw or cooked vegetables, or with baked potatoes. Pappardelle with wild boar are one of the tastiest and most sought after first courses of the Tuscan tradition. The preparation of the sauce is very long but it’s worth it! It begins by letting the wild boar pulp drain for a whole night (in order to release the wild acrid scents).
In the morning, the pulp is marinated in red wine with celery, carrot, onion, garlic, juniper berries and peppercorns. It is cut into small pieces and put to cook in a saucepan on a sautéed base. The other key ingredient is, obviously, the pappardelle, that are a type of egg pasta with a width of about 13 mm. Yummy!

It is a poor fish soup, with crustaceans and molluscs, usually octopus, cuttlefish, rockfish, with the addition of tomato sauce and wine. Often can also be found mussels, clams and other types of fish. There are several variants, it also depends on the cook’s imagination.
